Ayurveda (an ancient medical system which originated in India) has always maintained that the change of season is the best time to detox and clear your body of junk. A Kitchari fast is a very easy way to shed a few pounds and prepare for the coming season.

Ok, so the idea of a fast is about as appealing as a poke in the eye with a sharp stick. Heck it’s hard enough to diet, let alone to even think about going several days without food! But before you click away / head for the hills, let me tell you that it isn’t nearly as bad as it sounds.

During a Kitchari fast you get to eat food, and best of all, you can tailor the recipe to your individual taste, including  ingredients that you actually like to eat. Now that sounds better doesn’t it?kitchari veg

So what is Kitchari?

Kitchari literally means “mixture”. The basic dish is comprised of a vegetarian combination of brown rice, lentils or barley, mung beans and a variety of herbs and spices known to aid digestion.  There are many recipes using different variations of grains and beans, we suggest always adding some seasonal vegetables to  make it more nutritious, appetizing and colorful.

The idea is that you eat only the kitchari for between one and five days. You can vary the basic recipe according to your dosha or constitutional type to clear out toxins, lose weight and generally give your digestive system a well deserved rest. The mung beans are known for their ability to remove toxins such as pesticides and insecticides and this will help with the detox process.

In this sense, a kitchari fast is a kind of mono diet (you eat the same food for a set number of days.) It’s easy to prepare, filling and nourishing, and your body will thank you for it. If you are looking for kitchari weight loss results  you can expect to lose around 2-3 pounds over an average of 3 days. Always drink plenty of water and herbal teas during any fast to help with the speedy elimination of toxins.

The Base Ingredients for Kitchari

One half cup of brown basmati or whole grain rice, you may substitute lentils or barley

One cup of split yellow mung beans

1 teaspoon of fresh grated ginger root

1 tablespoon of ghee

2 cubes vegetable bouillon

Your choice of spices (black mustard seeds, cumin, fenugreek, fennel, coriander, turmeric etc)

A pinch of rock or sea salt to taste


  1. Melt the ghee in a large frying pan and add your herbs/spices.
  2. Add the mung beans and rice to the pan, along with 6 cups of water and the vegetable bouillon
  3. Bring to the boil and simmer for 30 -40 minutes until the grains are soft.
  4. Add your favorite seasonal veg during the last 20 minutes of cooking for best results.
  5. Add just a pinch of sea salt or rock salt.
  6. Serve with lemon and plain low fat or greek yogurt and enjoy!

Note:  You will have to soak the mung beans for a few hours or overnight prior to cooking and if you substitute lentils for the rice these will also need to be soaked. Always try to use organic whenever possible as the point of the Kitchari fast is to rid your body of toxins as well as give your digestive system a rest and a reboot.kitchari spices

The great thing about Kitchari is that there are no hard and fast rules. You can eat as much as you like, when you like, and for the length of time that suits you. Once prepared the Kitchari will keep for up to 3 days if refrigerated which means that you don’t even have to think about what to eat everyday which saves both time and temptation.
